Healthy Chilli:
1 lb. lean ground beef (or turkey)
2 large onions chopped
2 8oz cans no salt added tomato sauce
1 1/2 cups water and 1/4 cup water
2-4 garlic cloves minced
2 cans pinto beans drained
3 tbsp. chilli powder
1-2 jalapenos
1 tbsp. oregano
1 tsp. cumin
1/2 tsp. salt
1/8 tsp. cayenne
2 tbsp. cornstarch

Chicken Burgers:
2 lbs ground chicken
1 egg
1/2 cup plain bread crumbs
1 oz ranch seasoning mix
3 garlic cloves smashed and minced
1/2 cup finely diced onion
1/2 cup finely shredded cheddar cheese

Faux Mashed Potatoes (Cauliflower):
1 large head cauliflower core removed and roughly cut into florets
1/2 tablespoon olive oil
4 cloves garlic smashed
1 1/2 cups chicken broth
1/2 tablespoon butter
1 tablespoon sour cream (i skipped)
1/2 teaspoon salt or to taste
1/4 teaspoon fresh ground pepper or to taste
1/2 cup freshly grated parmesan cheese
1/2 teaspoon chopped fresh chives plus more for garnish


IP Chicken Fajitas:
2 large chicken breasts sliced thinly
1 large onion sliced
1 red bell pepper sliced
1 yellow bell pepper sliced
1 green bell pepper sliced
1 tablespoon vegetable oil optional – for taste
3 tablespoons fajita seasoning
¼ cup (60 ml) water

Apricot Marinade Meatloaf:

1lb. lean beef or turkey
1/2 cup uncooked quick cooking oatmeal
1 small onion
1 small apple
2 large egg whites
2 tbsp. parsley
2 tbsp. worcestershire sauce
2 tbsp. no salt ketchup
2 garlic cloves minced
1 tsp. oregano
1/4 tsp. salt

glaze:
1/2 cup apricot spread
2 tsbp. no salt ketchup
2 tbsp. oj
1 tbsp. honey
2 tsp. cornstarch
1/2 tsp. ginger
1/4 tsp. hot pepper sauce
