Todays healthy recipes in my new Vegan What I Eat In A Day video are all Vegan recipes to make ahead of time, and I am sharing my weight loss journey and weight loss tips, my best weightloss advice on a plant based vegan diet to loose weight healthily & nutritiously.
My vegan recipes today are all simple to follow and delicious. They are not speedy recipes because each recipe makes at least 3 healthy meals. Breakfast is my Rainbow cups - these are vegan eggless omelette muffin cups - full of nutritious rainbow vegetables, and protein with tofu, chia seeds and chickpea flower - we are making 28 rainbow cups, that's a lot of breakfasts, snacks and lunches, I advise to eat them in 3 days.
Lunch is my wholesome nutritious vegan lentil Turkish soup. This vegan soup is very healthy, protein rich, very cheap and easy to make & freeze. I am a big fan of homecooked vegan freezer meals. This split pea lentil soup is vegan and will make 6-10 portions of nutritious soup depending on you thick you like your soup and whether its being served as a starter, lunch or dinner.
Dinner is my yummy nutritious vegan cauliflower mac and cheese, your going to love my vegan cheese sauce, it is so nutritious and tastes so good, I use red lentil and chickpea protein pastas, you can use this vegan cheese sauce in lasagna, moussaka, in other pasta recipes and this is also a very budget friendly healthy vegan recipe. My vegan cheese sauce is made from potatoes, carrots, cauliflower and cashew nuts, so its very nutritious and has plenty of protein too, it is oil free nut contains nuts. This recipe creates 3 10" by 7.5" trays of dinner, will keep well a couple of days in the fridge and freezes perfectly.
All of today's recipes are very healthy, most are oil free or can be oil free. All of my recipes are always dairy free and todays recipes are gluten free, just don't add pitta or croutons to your soup.
My favorite recipes today are the vegan lunch recipe and the vegan dinner recipe because I love to prep and have healthy food in my freezer for easy healthy vegan dinners, these two recipes are also the quickest vegan recipes I am sharing today.
