Chocolate porridge
- 1 cup almond milk
- 1 tbsp chia seeds
- 1 tbsp ground flaxseed
- 2 tbsp hemp hearts
- 2 tbsp cacao
- 1 tbsp nut butter
- 1/4 tsp vanilla or peppermint extract


Pickled onions

1 cup warm water
1/2 cup vinegar (I used ACV)
1 1/2 ts salt
1 tbsp coconut sugar
1 red onion

Mix everything but the onion until sugar dissolves. Pour in a mason jar with the onion and leave overnight in the fridge

Coconut curry
- 1 package frozen peppers
- 4 chicken thighs

Sauce:
2 tbsp almond butter
2 tbsp coconut aminos
1 tbsp curry powder
1 can full fat coconut milk
1 tsp ground ginger

Add peppers and chicken to a pan on medium heat until cooked through, add sauce and allow to thicken 10 minutes. Serve over cauliflower rice
