soy milk + creamer! good creamer is v important

✿ Protein Packed Blueberry Pancakes ✿
1 1/4 cup soy milk
1 tsp apple cider vinegar
1 tsp vanilla extract
1 1/2 cup flour
3 tbsp sugar
1 tsp baking powder
1tsp baking soda
2 tbsp oil
pinch of salt
frozen bluebs!

❀ Tacos ❀
vegan chicken or tofu
corn tortillas
cabbage slaw (mayo, lime, agave, chili lime seasoning)
diced onions
cilantro

✿ Penang Curry ✿
1 white onion (diced)
5 cloves garlic (minced)
carrots
(cook down then add rest of the veggies)
veggies: 2-3 bell peppers, green beans, broccoli
1 can tomato paste
1tbsp curry powder / penang curry paste
1 tsp turmeric
1 1/2 cup veggie broth
1 can light coconut milk
1/3 cup peanut butter
1 tbsp maple syrup
** I'd also add black or cayenne pepper, basil, and extra maple syrup!
after done cooking add: firm tofu, chopped cilantro + eat w/ rice!
