Smoothie
- Handful fresh spinach
- 1 frozen banana

- 1/2 cup frozen wild blueberries
- 1-2 tbsp chia seeds
- 1/2 avocado (or 1 tbsp peanut (or almond) butter)
- Small piece of ginger
- Dash of vanilla / cinnamon
- Approx 1.5 cups oat milk

Berry Crumble
For the berries:
Approx 4-5 cups frozen / fresh berries of choice (About 400 grams)
1 tablespoon maple syrup (or a handful of chopped dates)
3 tablespoons water
2 teaspoons cinnamon

For the Crumble:
1 cup oats
1/2 cup almond flour or almond meal
1/2 cup chopped almonds, walnuts, or pecans
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup melted coconut oil or butter
1/4 cup pure maple syrup

Directions:
- Preheat oven to 350 F / 180 C.
- In a large bowl, toss the berries with maple syrup (or dates), water, and cinnamon. Pour berries into greased 9x9 or 8x8 inch baking dish.
- In the same (now empty) bowl, add oats, almond flour, nuts, cinnamon, salt, coconut oil and maple syrup. Stir crumble topping together and pour into baking dish on top of berries.
- Bake for 40 to 45 minutes until apples are soft, covering pan loosely with aluminum foil halfway through to prevent over-browning.
