Ingredients
California Walnuts - 2 Cups
Jaggery - 2 Cups
Water - 1/4 Cup
Cardamom Powder - 1/2 Tsp
Ghee
Method:
1. Chop the walnuts into small pieces.
2. Add ghee to a pan. Roast the chopped walnuts on a low flame until they are slightly crunchy. Keep them aside.
3. To a saucepan, add jaggery and then add in water.
4. Let the jaggery gradually melt.
5. Once jaggery is completely melted, strain it to avoid the dirt and other remnants.
6. Transfer it back into the pan and keep cooking it.
7. Once it starts bubbling up, add ghee and cardamom powder.
8. Mix it all well and check for string consistency in the jaggery mixture.
9. Once the jaggery starts to hold its shape, add in the roasted walnuts and give it all a quick mix.
10. Grease a tin with ghee.
11. Transfer the chikki mixture into it while it is still hot.
12. Even it out and cut it into small pieces.
13. Let the chikki rest aside for 1-2 hours at room temperature.
14. Healthy and yummy Walnut Chikki is ready to be relished.
