Hi everyone, welcome to my channel. Today I'm sharing this super easy, delicious and healthy vegan coconut red curry tofu. It's filling and easy to make in 15 minutes. Written recipe below...

Prep time: 5 minutes
cook time: 10 minutes
Recipe:
1 package firm tofu, cut into cubes
160ml coconut milk
1 1/2 tbsp red chilli powder
4 tbsp water
3 clove garlics, minced
1 inch ginger, finely chopped
1 yellow onion, thinly sliced
2 kaffir lime leafs
1 tomato, cut into wedges
1/4 cup water

1 tsp brown sugar
Salt and pepper for taste
Oil for cooking
Coriander, chopped

Method:
1.) Mix together coconut milk, red chilli powder and water, set aside.

2.) Heat 2 tbsp of oil in a wok, fry the tofu till brown and set aside.

3.) Heat another 1 tbsp of oil in a same wok, sauté the garlic, ginger and yellow onion till fragrant.

4.) Add in the kaffir lime leafs and tomato, stir to cook the tomato for 2 minutes before adding in the coconut milk mixture.

5.) Next cook for 2 minutes. (Stir frequently to keeps it smooth and prevent from curdling).

6.) Add in the vegan fish sauce, brown sugar, salt and black pepper for taste.

7.) Lastly add in tofu, stir to mix and coat well the tofu with curry. Remove from the heat and serve hot with rice.
