Cooking Time presents : Super Healthy! Chickpea & Quinoa Salad for you!
Ingredients:
1 1/2 cups white quinoa, cooked
1 cup chickpeas, cooked
A big bunch of flat-leaf parsley leaves only chopped roughly
A handful of mint leaves finely chopped
3 spring onions finely sliced
1 juice of a lemon
1 tbsp. maple
1 tbsp. olive oil
salt and pepper.

Instructions:
Blend all liquids and taste. Mix everything and then season to taste. Serves about eight people. I love it as a BBQ roast dinner or in my lunch tin; sprinkle with chill, add cucumber, and everything is yours in terms of sprucing the flavor of this salad.
