In this latest video, the Super Farmers team are back to put a new spin on a local favourite.

CHICKEN RICE SALAD

Healthy cooking can be delicious and full of local flavours too. In this 'Chicken Rice' salad recipe, we replaced rice with quinoa, and made a sesame-soy dressing.
We beefed up the greens in this ubiquitous dish with a piquant bed of cucumber, tomatoes, coriander, spring onion and microgreens to give it a local twist.

Recipe

Ingredients:

-1 cup quinoa
-3 shallots, roughly chopped
-3 garlic cloves, smashed
-1 knob of ginger, smashed
-1 3/4 cup chicken broth
-3 pandan leaves, crushed
-1 chicken breast

Salad: cucumber, cherry tomatoes, coriander, spring onion, microgreens
Sauce: soy sauce, sesame oil, vinegar, chicken broth, sugar, fried shallots

Directions:
-In a pot, combine quinoa, shallots, garlic, ginger, pandan leaf and chicken broth
-Place chicken breast on top in the same pot and boil for 15 mins over medium heat
-After 15 mins, turn off heat and let pot continue sitting in its own residual heat for 10 more mins
-Make sauce by frying shallots in low heat until golden and combine with the rest of the ingredients, to your own taste preference
-Plate chicken breast pieces atop quinoa with a big handful of salad. Drizzle sauce all over to serve.
