SPEEDY 15-MINUTE MEALS | easy + healthy dinner & lunch recipes

Let's make 3 super easy 15-minute healthy meals which are nutritious and perfect for a quick dinner or speedy lunch! These are perfect to meal prep for the week so that your meals are sorted!

The vibe here is a little chaotic but I had an immense amount of fun making this video with Caitlyn, Michelle and Jarrod! So join us for some chaos in the kitchen, yummy food and many anime references!

~ Ingredients and Instructions~
Intro and shennanigans: 0:00
Lentil bolognese: 1:15

1 large onion
6 tbsp tomato paste
1 can of cooked lentils (Drained)
2 tsp minced garlic
1/3 cup red wine
2/3 cup water
1 stock cube
1/2 tbsp each of thyme, oregano and smoked paprika
250g pasta of choice
Salt and pepper to taste

1. fill a pot with water and leave to boil and preheat a pan on medium-high heat. Once the water boils, add in your pasta and cook to al dente according to packet directions, drain when cooked and set aside.
2. While preheating, drain your lentils, rinsing off any excess lentil residue and finely dice your onion. Using the lentil can, fill halfway with water, you'll need this later!
3. When the pan is preheated, add in your onion and saute till translucent and the add in your spices, cooking for about 30 seconds to a minute to wake up the flavors
4. Next, add in your tomato paste and stir again for about a minute to lightly caramelise the tomato paste, add in your red wine and stir to combine before adding in the half can of water and also your lentils.
5. Add in the stock cube and stir until dissolved, once the mixture reduces slightly and has a thick but saucy consistency, taste for salt and add pepper and salt if needed.
6. Add in the pasta to the bolognese sauce, toss to coat, plate up and grate over parmesan!

Sesame Soba with Miso Eggplant and Tempeh: 7:58

150g of tempeh
1-2 cups of chopped eggplant
1 baby bok choy
1/2 cup edamame pods
1 bunch of soba noodles
1-2 tbsp sesame kewpie dressing
3 tbsp sake
1 tbsp soy sauce
2 tbsp red miso
1-2 tbsp sugar
1 tsp minced garlic
1/2 cup of water
Furikake

1. Preheat a large and small pot of water to boil, a frying pan and turn the oven on to preheat at 180c. When the large pot boils add in your soba noodles, when cooked, flush with cold water.
2. Chop eggplant into strips and add olive oil to the preheated frying pan, then add in your eggplant to sautee until browned
3. Chop up your tempeh, lay on your oven tray with baking paper and roast in the oven for 10 mins until crisped
4. Quarter your bok choy and add to the small pot of water as well as half a cup of edamame bean pods, when cooked, remove from the water, flush the edamame with cold water and remove beans from the pods
5. Once the eggplant is cooked add in your soy sauce, sake and 1/2 cup of water, at this point turn the heat down to medium
6. Add in miso, sugar and garlic to the eggplant and sautee till miso melts and sauce thickens slightly. Remove tempeh from oven and add into the pan, toss to coat in the sauce.
7. Add soba noodles to a bowl, toss with sesame dressing, top with bok choy, edamame, tempeh and eggplant and finish with furikake!

Chicken, Spinach and Mushroom Wontons with Chili Oil: 14:29

Ingredients:
1 packet wonton wrappers
250g chicken mince
1/2 cup worth of soaked wood ear mushrooms (shiitake are okay too!)
30g baby spinach
1/4 cup chopped coriander + 1 tbsp to garnish
2 tbsp sake
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp minced garlic
1/2 tbsp chinese chicken stock powder (or normal stock powder)

Sauce:
1 tbsp soy sauce
2 tsp sesame oil
1 tsp minced garlic
Chili oil (as much as you want)
Coriander to garnish

1. Prepare a pot of water to boil
2. Chop mushrooms. spinach and coriander and add into chicken mince along with the sake, soy sauce, sesame oil, garlic and stock powder, stir and combine mixture thoroughly.
3. Add generous spoons of filling to the wonton wrapper, seal the edges with water and squeeze together tightly
4. Add the wontons to the water and boil on high for about 5 minutes (if you have more wontons they may need to cook for a little longer)
5. Drain the wontons when cooked, prepare the sauce in a bowl and add the wontons, toss to coat and garnish with coriander.
