Green smoothies are a great, energising way to start the morning and incorporate the goodness of greens, with the sweetness of fruit.

To make a great green smoothie, mix green leaves and fruit (except fibrous fruit such as citrus fruits) in the ratio 1:2 by volume (1 part green leaves and 2 parts fruit) and blend with 1 part water. Flavourings could be added as needed (ginger, mint, lemon zest). Smoothies should not be strained. Never add vegetables (such as cucumber, broccoli and zucchini), nuts or seeds to a green smoothie. You may make a smoothie with just melons and greens, but never mix melons and other fruits in the same smoothie. You do not need to add water when using melons.
It’s best to alternate between different kinds of greens on different days – spinach, mint, coriander, celery greens, spring onion greens, bok choy, beetroot greens, basil, betel leaves, etc. Bananas, mangoes, papaya, chikoo, grapes, passionfruit and other pulpy fruits make good smoothies. You could add microgreens in smoothies to pack in more nutrients.

Here is a basic recipe:

Ingredients
2 cups peeled, chopped and frozen ripe bananas OR
1 cup peeled, chopped and frozen banana + 1 cup chopped apple/pear/mango or ½ a pineapple/ papaya / berries or any other pulpy fruit of your choice (total 2 cups of pulpy fruit)
1 cup lightly packed down shredded green leaves
1 cup water (use chilled water if using a high speed blender)
1 – 2 soft dates (optional), pitted
Method
In a blender, blend all the ingredients together (except for dates) until homogeneous and smooth. Add the dates if the smoothie is not sweet enough for you. The smoothie should be absolutely delicious. Pour into two tall glasses and enjoy!

Raw Vegan Pizza

Ingredients

Crust

1 Bell Pepper
1/3 cup sunflower seed
1/3 cup walnut
1/3 cup flax seeds
2 tsp Garlic powder
1/4 tsp Nutritional yeast
1/2 tsp salt

Cheese

1/2 cup soaked raw cashews
1/2 cup soaked melon seeds
1 tsp Garlic powder
2 tsp fresh herbs/ 1/4 tsp dried herbs
2 tsp lemon juice
2 tbsp nutritional yeast
1 tsp salt
2 tbsp warm water

Marinara

1 cup soaked sun dried tomatoes
1/4 cup soaked dates
2 tbsp apple cider vinegar
2 tbsp garlic powder
1/2 tsp salt
1/4 tsp pepper
1/4 cup fresh herbs / 2 tbsp dried herbs

Toppings

1 Bell pepper (or 1/4 in different colors)
4-5 cherry tomatoes
Raw baby corn
Avocado
Arugula
1/4 cup olives
Balsamic vineger

Method

Crust

Combine all ingredients in a food processor and blend till a wet “dough” forms.
Spread the mixture evenly into a baking sheet and bake at lowest temperature in your oven for 4-5 hours, and flip the crust halfway. The crust needs to be dry and pliable
Or use a dehydrator to dry out the crust, at 115* F for 5-6 hours or until the crust has dried out. Flip the crust and dry it till the base is almost like a soft cracker

Marinara

Blend all ingredients in a blender till a coarse paste forms.
You may add few tbsp of warm water, 1 tbsp at a time to thin out the mixture to desired consistency.

Cheese

Add all ingredients to a blender and blend till the mixture is smooth and silky. You may additionally add water 1 tbsp at a time to desired consistency
The cheese sauce can be used right away, or for a more fermented cheese it can be left overnight in a cool dark place for 8-10 hours and be used the next day!

Assembly

Take the base, spread the marinara sauce over evenly.
Next add toppings of choice, raw veggies/ greens/ micro greens/ herbs, seeds and then dollop on the cheese all over the pizza.
The pizza is now ready to be devoured!

Date Snicker Bites

Ingredients :

6 Medjool / Kimia dates
2 tbsp peanut butter
1 tbsp whole or crushed roasted peanuts
1/2 tbsp cacao nibs

Method :
1. Cut a slit in each date and remove the seed.
2. Fill each date with peanut butter and a sprinkle of cacao nibs and roasted peanuts.
