Ingredients:
- 1 cup cooked quinoa
- 2 cups super greens mix
- 1 cup plum tomatoes, diced
- 1/2 red onion, thinly sliced
- 1 cucumber, diced
- 1 cup blackened chicken breast, cubed
- 1 cup carrots, shredded or thinly sliced
- 1/2 cup feta cheese, crumbled
- Avocado when serving (optional)

Dressing:
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar or lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste

Layer dressing, tomatoes, cucumber, onion, carrots, quinoa, chicken, feta, and greens in a jar. Shake and enjoy!
