Amaranth Dates Ladoo

Amaranth/ Rajgira is a popular food choice during days of fasting. These Ladoos are gluten-free, sugar free calcium-rich , protein and fiber rich snack. It is go to recipe for kids snacks.

Ingredients
1/2 cup Peanuts
1 cup Desiccated Coconut
1 cup Amaranth Flour
1/4 cup Ghee
8-9 Medjool Dates ( or any variety of soft dates will do )
1/2 tsp Cardamom powder

- In a heavy bottom pan roast peanut and coconut separately and keep it aside
- Dry roast the amaranth flour for 7-8 min
- After 7-8 min add 1/4 cup ghee little at a time
- Roast the flour till it changes color and starts coming together
- Take the flour out on the plate
- Deseed the dates
- Pulse the peanut in the mixer grinder after that add the dates and grind
- Add the peanut/ Dates mixer to the flour & desiccated coconut along with 1/2 tsp Cardamom Powder and mix well
- Start binding the Ladoos
- Cool it at room temperature & store it in a airtight container
