Hello internet friends! For this week's WW meal prep I'm making (with Poe's help) Oatmeal Chocolate Chip Cookies and Pesto Orzo with Turkey Meatballs. It's quick and easy and DELICIOUS! Because one of my WW Personal Points zero point foods is whole grain pasta, I'm using whole wheat orzo today. Details for these healthy recipes are listed below.

makes 18 cookies
1 3/4 cups old fashioned oats
1/3 cup all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/4 - 1/2 tsp salt
1/3 cup unsweetened applesauce
1 egg
1/8 cup zero calorie sweetener
1 tsp vanilla extract
1/4 cup sugar free maple syrup
1/3 cup Lily's sugar free Dark Chocolate chips

1. Add oats to a blender and pulse until the texture is varied.
2. In a bowl, add the oats, flour, baking powder, cinnamon, and salt. Whisk to combine.
3. In another bowl add applesauce, egg, sweetener, vanilla, and maple syrup. Whisk to combine.
4. Add the wet ingredients to the dry ingredients and stir.
5. When combined, fold in the chocolate chips.
6. Cover and refrigerate for 30 min up to 3 days.
7. Scoop cookies out onto a cookie sheet.
8. Bake for 10 minutes in a 350 degree oven.
9. Allow to cool on cookie sheet for 2 minutes then transfer to a cooling rack to cool completely.

serves 4
200g orzo (I used whole wheat)
1 tsp olive oil
1 1/4 cups chicken broth
1 packet Knorr Pesto Sauce mix
20 meatballs

1. In a sauce pan on medium low, add orzo and oil and stir until it begins to toast.
2. Add the chicken broth and pesto sauce mix. Stir together and bring to a boil.
3. Reduce heat, cover, and simmer for 6 minutes (stir occasionally).
4. After 6 minutes, turn off the heat and let it sit covered and untouched for 3 minutes.
5. Serves 4, each serving gets 5 meatballs.
