Make tasty and heathy mixed vegetable soup at home and enjoy!!

Healthy and Tasty Mixed Vegetable Soup (Serves 4 people)

1 Potato
1 Onion
4 cups Water
4 tbsp Cauliflower
4 tbsp Spring Onion
4 tbsp Carrot
4 tbsp Green Peas
3 tbsp Green Garlic
Butter (for cooking soup and garnishing)
1 tbsp Corn Starch
1 tbsp Fresh Cream
1 Cheese cube (grated)
Black Pepper

1. Chop 1 potato and 1 onion into cubes, add 4 cups water, salt and cook them in a cooker.
2. After the potato and the onion are cooked, separate the water and keep it aside.
3. Blend the potato and onion into a fine paste.
4. Add one tbsp butter into a pan. Add most of the spring onion and green garlic and save some of it for garnishing.
5. Add all the other vegetables and fry them. Add salt and the potato-onion paste.
6. Add the left over stock from before. Mix cornstarch with a little bit of water and add it to the pan.
7. Add the fresh cream and cook it for a while.
8. Towards the end, add grated cheese and black pepper.
9. Garnish with left over spring onion, green garlic and butter. Serve hot.
