John Head offers session one of "Healthy Cooking" for the JCCC Retirees Association

During the session (offered on May 11, 2022, at 2 PM), John Head shows the kitchen equipment necessary for healthy and good cooking. He discusses ultra-pasteurization, cholesterol, milk fat, protein, carbohydrates, and where calories and sodium sneak into our diet. John also offers suggestions on how to modify recipes to reduce calories and offers substitutes for staples in the heart-healthy kitchen. He shows roasting and air-frying as ways to lighten up our menus and still produce crispy, moist chicken and fish. The session also offers a dozen recipe modifications that produce lighter results and avoid the common allergens of gluten, nuts, shellfish, milk, and eggs.
