My healthy thali
Portion size: 4-5 servings

Bajre ka rotla
Bajri flour 2 cups
Salt 1 tsp
Ghee 2 tbsp
Water as required
In a bowl, take bajra flour, salt and mix it.
Add water and knead a soft dough out of it.
Divide it into portions.
Take one portion of the dough, dust it with some bajra flour and flatten it with the palm.
Heat a tawa, transfer roti to the hot pan, and apply some water on top side of the roti.
Roast it till the water dries and flip it.
Roast it for 4-6 mins and transfer it to a plate.
Apply ghee on the top of the roti and serve hot.
Brown chana ki sabji
Soak brown chana 2 cups
Mustard oil 2 tbsp
Jeera ½ tbsp
Black pepper 6-8 pcs
Cloves 4-5 pcs
Black cardamom 2 pcs
Green cardamom 3 pcs
Bayleaf 2 pcs
Cinnamon ½ inch
Onion paste 1 cup
Tomato puree ½ cup
Yellow chilli powder 1 tsp
Turmeric powder 1 tsp
Coriander powder ½ tbsp
Red chilli powder 1 tsp
Jeera powder 1 tsp
Garam masala ½ tsp
Salt ½ tbsp
Coriander chopped 1 tbsp
Kasoori methi ½ tbsp
Water as required
In a pressure cooker, cook brown chana for 4 whistles.
Take out some boiled chana and grind them.
Heat a pan, add mustard oil, jeera, blackpepper, cloves, black cardamom, bayleaf, cinnamon, green cardamom and crackle them.
Then add onion paste and saute it.
Later add turmeric powder, coriander powder, red chilli powder, jeera powder, garam masala, salt and cook them.
Add fresh tomato puree and cook until it releases oil.
Then add boiled chana and paste. Add some water and cook for a few minutes.
Lastly add chopped coriander, kasoori methi and serve hot.
Sprouts salad
Mixed sprouts 1 cup
Onion diced ⅓ cup
Tomato diced ⅓ cup
Coriander chopped 1 tbsp
Red chilli powder 1 tsp
Green chilli copped ½ tsp
Chaat masala ½ tsp
Salt ½ tsp
Lemon ½ pc
Coriander 1 tbsp
Method:
Take a bowl, add mixed sprouts to it.
Add red chilli powder, salt, chaat masala, chopped green chillies, chopped coriander, diced tomatoes, diced onion and mix it.
Squeeze lemon and toss it well.
Mix it and it's ready to serve.
Brown rice
Brown rice 1 cup
Water 1 ½ cup
Salt ½ tbsp
Ghee 1 tbsp
Jeera ½ tbsp
Heat a pan, add ghee, jeera and let it crackle.
Then add soaked rice, salt and water.
Cook it till the rice gets well done.
Bhindi ki sabzi
Bhendi 500 gm
Mustard oil 2 tbsp
Red chilli powder 1 tbsp
Coriander powder 1 tbsp
Turmeric powder 1 tsp
Saunf crushed ½ tbsp
Amchur powder ½ tbsp
Kalonji 1 tsp
Salt ½ tbsp
Coriander chopped 1 tbsp
Take a bowl, red chilli powder, turmeric powder, coriander powder, salt, amchur powder, saunf powder, mustard oil and mix it.
Fill this mixture in the bhendi.
Heat a pan, add mustard oil, kalonji, stuffed bhindi and cook it on medium low flame until cooked well. Cover the pan with the lid.
Give a quick stir at intervals.
Lastly add chopped coriander and serve hot.
Gud bajra churi
Bajra rotla 1 pc
Ghee 1 tbsp
Jaggery ⅓ cup
Dry fruits 1 tbsp
Heat a pan, put the bajra rotla and make it a little crisp.
Take a mixer jar, add pieces of bajra roti, jaggery, ghee, cardamom powder and grind it.
Then add crushed bajra rotla and mix it.
Then add some chopped dry fruits, mix it and serve.
