Healthy Sausage, Chicken & Kale Soup | Cooking with Holly

‘Tis the season for soup! (Not that I need an excuse to make soup, but it tastes better when it’s cold outside.) This recipe is both super yummy and sneakily healthy, so grab your biggest soup pot, put on some cozy music (or an audio book), and I’ll see you in the kitchen.

Recipe:
-1 package of smoked sausage, chopped into small pieces
-1 Rotisserie Chicken, pulled and chopped
-2 cartons of chicken broth
-4-5 cloves of garlic, minced
-1 tsp salt, more to taste is desired
-1/2 tsp pepper, more to taste is desired
-2 tsp onion powder
-2 cans white canelli beans
-juice from 1/2 lemon
-1/2 cup heavy cream or coconut cream
-1 head of tuscan kale

Heat 1 tsp of olive oil in your soup pot. Chop and saute sausage with minced garlic until browned. Add chicken, chicken broth, and seasonings. Bring to a boil. Drain & rinse your beans, then add beans, lemon juice, cream and kale. Adjust seasonings to taste. Let simmer for about 10 minutes. Enjoy!
