I created this YouTube Channel to share my experience with losing 70 lbs in 2020 on a whole food plant based diet. I came across Dr. Mcdougall and the Starch Solution in May of 2020 and was able to do a deep dive to learn about plant based living and plant based weight loss. It has changed my whole life! By learning about calorie density, I was able to use plants to lose the excess weight, fix my hormones, heal my body and am now living my most healthy life. I was able to this with a full plate, never feeling hungry or dissatisfied. I created this channel to share tips, tricks, and recipes that I wish I could have found when I was just starting my journey.

Recipes from today:

Creamy Pesto Sauce: (this is fantastic on pasta, veggies, anything really!)

2-3 yukon gold potatoes
One 10 oz bag of frozen cauliflower
1/4 onion

Boil until fork tender

In a blender add:
1 whole lemon's worth of lemon Juice
1 can drained white beans (I prefer great northern beans)
1 TB Garlic Powder
1 TB Onion Powder
Fresh Basil to personal taste
Fresh Chives to personal taste
Salt and pepper to taste
2 TB Nutritional Yeast
Optional: 1 TB Kirkland Blend No Salt Seasoning, and 1 TB Daks Green Zest seasoning (I buy it here: https://amzn.to/3D9aEva)
Add any other spices you desire! Don't be afraid to get creative!
Add boiled veggies to the blender and blend until desired consistency. Enjoy!

One Pot Pasta Recipe
3 cups frozen veggies of choice (I used a mix of mushrooms, peppers on onions, and vegetable blend)
1 can diced tomatoes (or fresh if you desire)
1 Zucchini
1 Yellow Squash
1/2 Cup red lentils
3 cups pasta of choice
Seasoning of choice (I used 2 TB nutritional yeast, 1 TB Garlic Powder, 1 TB Onion Powder, 1/2 tsp pepper, 1 tsp smoked paprika)
4 cups (or more if needed) vegetable broth or water
Fresh Spinach

Sauté frozen veggies until warming, add chopped zucchini and yellow squash. Add canned/fresh tomatoes, lentils, pasta, and seasoning and stir until mixed. Pour vegetable broth/water over until just barely covering the pasta veggie mix. Cover, and simmer on low for 11-16 min (or until pasta is done). Stir in fresh green if desired, and ENJOY!
