We all know I love a good healthy bowl, here’s the latest: (2+ servings)
- cook your grains: I used Banza chickpea rice, you could use quinoa, farro, rice, whatever u like but I recommend a higher protein choice
- roast 1/2 sweet potato, 1 cup cauliflower, and 1 cup carrot at 400F with olive oil, salt, pepper, garlic powder, and chili powder
- sauté 1 cup shaved Brussels and 1 container sliced shiitake mushrooms with a little oil, water to help cook as needed, salt, and coconut aminos to taste
- make the herb tahini sauce (this stuff is crack and it goes with EVERYTHING): 1/2 cup tahini, 1/4 cup lemon juice, 1 tbsp olive oil, 4 fresh garlic cloves, 1 tsp maple syrup, salt & pepper, about 2 cups of your favorite fresh herbs. I did dill, cilantro, and parsley. Mix in a food processor and add water to thin it out as needed
- build your bowl! I started with spinach, piled on all my grains and veggies, topped with some crispy chickpeas, pickled onions and tahini sauce. DELISH!
