Blueberry Banana Overnight Oats

Fruity Baked Oatmeal Cups

Ingredients:

* Non stick cooking spray
* 2 large eggs, lightly beaten
* 1 tsp pure vanilla extract
* 2 large bananas, mashed
* 1 T raw honey
* 2 1/2 cups old fashioned rolled oats
* 1 T ground cinnamon
* 1 1/2 tsp baking powder
* 1 1/2 cups unsweetened almond milk
* 2 cup fresh blueberries

Instructions:

1. Preheat oven to 350 degrees.
2. Prepare 12 muffin cups with cooking spray, set aside.
3. Combine eggs, vanilla, bananas and honey in a large bowl. Mash bananas and mix well. Set aside.
4. Combine oats, cinnamon and baking powder in a small bowl, stir well and combine with banana mixture
5. Stir in almond milk and mix well.
6. Divide oatmeal evenly between prepared muffin cups.
7. Top evenly with blueberries.
8. Bake 26 to 30 minutes or until brown
9. Let cool and serve!
