Finally tried the viral shrimp boats with my own take! Grab some shrimp and season them with lime juice and Cajun seasoning. Carve the seeds out of your cucumber and add some rice to your cucumber. Top with cooked shrimp and Sriracha (I used vegan chipotle mayo because that’s all I had). Top with green onions and enjoy. Healthy, fresh, and delicious!
