☞ INGREDIENTS
5 cups (1kg) black eye beans
6 medium-sized (1.2kg) sweet potatoes
5 (1.25kg) ripe plantains
1.5 cups (375ml) water
1.5 cups (375ml) liquid stock
4 Knorr stock cubes
5 tbsp smoked paprika
1 tbsp mixed herbs
1 tbsp curry powder
1 tbsp garlic powder
1 tbsp onion granules
1 tsp mace
1 tsp all-purpose seasoning (optional)
1.5 tsp sea salt
1/2 coriander
1/2 cardamom
1/2 cumin
1/2 fenugreek
1/2 garam masala (optional)
2 onions (blended)
1/2 cup sunflower oil (or just 1 cup sunflower oil, no palm oil)
1/2 cup palm oil (or just 1 cup palm oil, no sunflower oil)
Cook on slow heat for 7 hours or medium heat for 3.5 hours.
