Today's video I am bringing you two cozy, delicious winter soups to warm your soul and body this winter 2022. They are easy and delicious and I hope you end up trying them!

Jalapeno Popper Soup – Crockpot
INGREDIENTS:
1 pound chicken breast
1 Tblsp Butter
8 oz Cream Cheese
½ yellow onion – diced
4 garlic cloves – diced
3 cups chicken broth
2 jalapeno’s – chopped and deseeded for less heat
½ tsp onion powder
½ tsp cumin
½ tsp paprika
1 tsp salt
½ tsp black pepper
Bacon and green onion for garnish
DIRECTIONS:
Add all ingredients except for the cream cheese in the crockpot for 4 hrs on low or 8 hrs on high
When the chicken is done – remove and shred – then replace into the crockpot
Add the cream cheese – and let cook for 30 more mins
Top soup with bacon and green onion
Enjoy!

Olive Garden Copycat Zuppa Toscana Soup – Dutch Oven
INGREDIENTS
1 Tblsp Olive Oil
1 pound Sausage
2 Tblsp Butter
2 Tblsp Flour
1 yellow onion – diced
1 tsp oregano
½ tsp black pepper
½ tsp red pepper flakes
3 garlic cloves – diced
2 cups water
1 cup milk
2 cups chicken broth
2 cups beef broth
5 small potatoes or 2 large – diced
2 cups kale
DIRECTIONS:
In the Dutch oven add the oil and brown and cook the sausage
Remove the sausage and most of the grease
Add butter and whisk in the flour
Add in 1 cup of chicken broth – and whisk until no lumps
Add the onion, oregano, pepper, red pepper, and garlic
Add in the water, milk, rest of chicken broth and the beef broth
Bring broth to a boil – and add in the potatoes
Simmer for 10 mins or until potatoes are fork tender
Add the sausage back into the Dutch oven and then add in Kale!
