Can You Fully Reverse Autoimmune Disease?

Question: "My Doctor says once you are diagnosed with autoimmune disease, you will still get organ damage even after labs are normal and symptoms are gone. Is that true?"
Think of it this way. How do you diagnose an autoimmune disease?
Answer: from labs and symptoms.
So how can you possible believe that when symptoms are gone and labs are normal that you can still diagnose that disease?
