These muffins are perfect for fussy eaters. Packed with the nutrition of oats and banana plus every kids favorite, chocolate chips!
Ingredients:
Oats Flour - 120 grams (1/2 cup)
Baking Powder - 1 teaspoon
Baking Soda - a pinch
Salt - a pinch
Ripe Banana - 1
Coconut Oil - 60 ml (1/4th cup)
Maple Syrup - 40 ml (little less than 1/4th cup)
Vanilla Essence - 1 teaspoon
Egg - 1 medium sized (room temperature)
Flaxseed Powder - 1 tablespoon
Bake Time - 180C for 15-18 minutes in pre-heated oven
Method:
-In a bowl, take oats flour,
baking powder, baking soda &
salt. Combine well.
-Take a bigger bowl and
mash a ripe banana well
with a fork.
-Now add coconut oil, maple
syrup, vanilla essence & egg.
Whisk very well.
-Add flaxseed powder.
Combine well.
-Now combine dry mix into the
wet mix with cut and fold
technique. Then add chocolate
chips and fold in gently.
-Makes a great tea time snack or a
healthy dessert option for kids!
