Banana bread is a type of bread made from mashed bananas. Bananas that are too ripe to eat, but are perfect for baking a banana bread. It is often a moist, sweet, cake-like quick bread. It takes just few minutes to mix all the ingredients and just wait till the oven will make its job.

This recipe works always!
To make healthy banana bread, for sweetness we use bananas and honey instead of sugar and for the butter, we opted in for coconut oil. As for the flour, whole wheat flour works wonders.

Ingredients

2 eggs large
1/2 cup extra virgin coconut oil or olive oil ( or butter)
1/3 cup honey (maple or maple syrup)
1/4 (60 ml) cup milk
1 teaspoon Vanilla extract
2-3 ripe bananas (about 1 cup)
1 3/4 cups (280 g) whole wheat flour or plain all purpose flour
½ teaspoon ground cinnamon optional
1 teaspoon baking soda ( not baking powder)
pinch of salt
You can add to your banana bread nuts or raisins, cranberries or dates, even Choco chips!

Method

1. Pre-heat oven to 170 C (345F). Grease a 9x5 inch loaf pan(23*13 cm) and set aside.
2. We need just One bowl, First add all wet ingredients ripe bananas and eggs, milk and coconut oil, honey, vanilla extract. Whisk well.
3. After all wet ingredients combined together, it is time to add flour, cinnamon powder, baking sodium and pinch of salt.
4. Pour batter into greased loaf pan, sprinkle with some more cinnamon, or nuts, raisins or banana slices (optional) Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!

To make this bread gluten free: Use Bob's Red Mill gluten free flour. For dairy-free: use almond milk or oat milk and maple syrup.
