Ingredients

2 bags (8 oz. each) of shirataki noodles, rinsed and drained
3 cups frozen shelled edamame
2 cups frozen corn
1/2 cup peanut butter
1/2 cup rice vinegar
1 tablespoon Sriracha hot sauce
2 tablespoons water
1/2 teaspoon salt
3 cups shredded carrots
1 pint grape tomatoes, halved
1 medium Granny Smith apple, quartered and thinly sliced
1/2 cup fresh cilantro, chopped

Instructions

Heat a large saucepan of water to boiling on high. Add the shirataki noodles, edamame, and corn; boil for 2 minutes. Rinse and drain well.
In a large bowl, whisk together the peanut butter, rice vinegar, Sriracha hot sauce, water, and salt. Add the shredded carrots, tomatoes, apple, cilantro, and noodle mixture. Toss until well coated.
Serve with additional Sriracha hot sauce, if desired.

Tips:
For a more flavorful salad, toast the peanut butter in a pan over medium heat for 1-2 minutes, stirring constantly, until fragrant.
If you don't have shirataki noodles, you can substitute another type of noodle, such as spaghetti or fettuccine.
For a vegan salad, omit the Sriracha hot sauce.
This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
