Who doesn’t love butternut squash in fall? It feels warm, cozy and just screams fall time. Not to mention, it is really healthy for you, abundant in vitamin A. So I wanted to share with you some of my favorite recipes I like to do with my butternut squash. They are healthy, and trust me, not your typical butternut squash recipes!

Vegetarian butternut squash chili con carne

A huge favorite in our home is chili con carne which I usually make with low-fat minced turkey or pork. But this one is so special and not just because of the squash, but it is also made with lentils, so you get your protein in as well. It is soo good, you need to try it!

Butternut squash and carrot mash with salmon

This recipe is really easy and the butternut squash and carrot mash make an excellent side dish! Both carrots and the squash are rich in vitamin A, so this is a really healthy dish with salmon, that is rich in omega-3 fatty acids. This mash is also great for children!

Parmesan butternut squash whole wheat penne with sage

This one is a huge favorite of mine! The squash just tastes soo good with the sage and the parmesan cheese, and it is also really easy. Perfect for a quick dinner!
Chili butternut squash sandwich cream
I’m all for a quick and easy sandwich cream, so why not make one with butternut squash? It is really spicy and unique because of the chili, and with the parmesan cheese and pumpkin seeds on top, just makes an excellent snack or breakfast!

Butternut squash and apple cream soup with cinnamon and coconut milk

I’ve prepared some butternut squash cream soups in my life and this one is hands down the best! The apple gives it a unique taste and it is just the perfect combination with coconut milk and fall spices, like ginger and cinnamon. Tastes like heaven and soo warming on a cold day!

Butternut squash chia pudding with almond milk and fall spices

This one is a unique fall take on your basic chia pudding! It just screams fall because of the nutmeg, cinnamon, cloves, and honey and you need to add this to your fall recipes!
