Today I am sharing some of my favorite ONE POT WONDERS that are vegan, whole food plant-based, easy to whip up, and delicious! These dishes all feature noodles and are great "crowd pleasers" if you are trying to impress your non-vegan family and friends. Not only that, these one-pot wonders are healthy and great for vegan weight loss - I ate them during my 50 LB weight loss and now to maintain.

One-Pot Wonder Recipes:
TACO PASTA -
Veggie pasta
Taco Seasoning
Peppers
Red onion (I used 1/2 of one)
Garlic ( I used 4 cloves, minced)
4 C veggie broth
Cook at 350 degrees for 40-45 mins
Add black beans and my Healthy Vegan Mama cheese sauce: https://youtu.be/2JE0BNhZ4z4
BROC, MAC & ALFREDO:
Macaroni noodles
Broccoli
Salt and pepper - pinch
Garlic ( 4 cloves minced)
4 C veggie broth
Bring to a boil and cook until noodles are soft

RAMEN:
2 servings of uncooked ramen
Shredded carrots
peppers
Pea shoots
Bok Choy
Onion ( I used 1/2)
Garlic (I used 4 cloves, minced)
Chili Paste (2 tbsp)
Low Sodium Soy Sauce (1 tbsp)
Brown Sugar (1 tbsp)
Sriracha ( a couple of squeezes)
4 C veggie broth
Brig to a boil, turn heat off and done
